Preparing beef stew on the wood-fired bbq

Together with Peter from Tasteful catering, we prepared several dishes on our bbqs. In this blog we will tell you how to prepare a beef stew on the Utenfyr, the wood fired bbq & fire pit. Our Utenfyr is a beautiful round fire pit with many possibilities. Besides being a classic fire pit, the Utenfyr is also great for preparing meals.

On a sunny spring day, you'd rather not be inside the kitchen, but want to enjoy the sunshine and the outdoors. Our outdoor cooking line brings your kitchen outdoors and in no time you will be making the most delicious meals. For preparing Beef stew, we chose our wood-fired Utenfyr fire pit. Half of the Utenfyr is covered with a grill/griddle plate. This plate is very good for grilling, baking and simmering. For making a Beef stew, we recommend using a Dutch Oven or cast iron pan. This pan retains its heat for a long time, so always use a barbecue glove to move the pan.

Ingredients & Supplies Beef Stew

  • 1 kg of beef or pork chops, cut into cubes
  • 3 garlic cloves
  • 1 onion, in coarse rings
  • 1 bottle of red wine
  • 400 ml tomato sauce
  • 250 gr. pearl onion
  • Cube of butter
  • Pepper & salt
  • Cast iron pan (e.g., Dutch oven)
  • Wood
  • BBQ gloves

Preparation Beef stew on the wood-fired bbq

1. Dice the meat. For the beef stew, you can use beef or suca racks. Press the garlic cloves and cut the onion into coarse rings.

2. Let the meat come to room temperature and, in the meantime, fire up the Utenfyr (or your own wood-fired bbq).

We recommend firing up the Utenfyr using the Swiss firing method. You stack wood crosswise in the open area of the coal bin next to the grill/griddle. You start with some large pieces of wood at the bottom and crosswise on top of that you put smaller and smaller pieces. You light the fire from above with organic firelighters or kindling. Caution! Do not use chemical white firelighters.

3. Once the fire is well lit and the plate is heated, place the cast iron pan on the Utenfyr's grill plate and let it get well hot.

4. When the pan is well hot move it to the baking sheet.

5. Heat the knob of butter in the pan and add the meat. Stir the meat frequently and brown it all around.

6. Add the onion and garlic and sauté for a while. Then also add the 400 ml tomato sauce to the pan and stir well.

7. Next, add the red wine. Make sure all the meat in the pan is just submerged in red wine.

8. Let the pan of meat simmer on the griddle. Stir occasionally. The longer you let the meat simmer, the more tender it becomes. We keep a simmer time of about 2 to 3 hours. Make sure to keep the fire burning in the Utenfyr.

Meanwhile, of course, you can relax in the hot tub or sauna while the meat is simmering on the griddle.

9. Season with salt and pepper and add the pearl onions. Stir this well into the meat.

Then now is the time to set the table and enjoy the homemade Beef Stew. The meat goes well with fries or rice. Bon appetit!
